Pasta on a Dalmatian island sounds like a compromise. It isn't - not here, not when you're sitting at a table ten metres from the sea with a plate of Gorgonzola Beef in front of you.
Why pasta works on the Hvar Riva
Croatian coastal cooking and Italian pasta have more in common than most people realise. The same olive oil, the same seafood, the same vegetables from sun-baked gardens. At Marigo we've been making pasta since 1987, and the approach is simple: choose the best ingredients, don't overcomplicate them, don't rush.
Our signature: Marigo Mediterrano
Shrimps, tomato-cream sauce, baby spinach, cherry tomato and parmesan. It's the plate that tells you exactly what kind of restaurant you're in. The sauce is light enough not to overpower the shrimp, rich enough that you're scraping the bowl at the end. It comes in spaghetti or penne - most people choose spaghetti. It's €16 and worth every cent.
Gorgonzola Beef - for the steak lovers
Steak strips, garlic-cream sauce, baby spinach, gorgonzola, cherry tomato and parmesan. If you came to Hvar expecting seafood and this arrives, you'll be glad you ordered it. The gorgonzola melts into the cream; the steak stays firm. It's the kind of pasta that earns its name. €17.
Classics done right
Pesto alla Genovese: basil pesto and parmesan, made properly, without fuss. €16. Pomodoro: tomato sauce, cherry tomato, basil, parmesan. €15. Both are vegetarian. Both are exactly what they should be - which is harder to achieve than it sounds.

Every pasta dish on our menu comes in your choice of spaghetti or penne. Ask when you order. We don't care which - we care that it arrives the way you want it.
